Pumpkin Soup
Ingredients
Leeks
Celery
Pumpkin
Garlic
Thyme
Chicken stock
Cream
Salt and pepper
Chili powder
Cayenne
Sweet corn
A splash of cream sherry
EVOO and butter
Instructions:
Sauté the leeks and celery til tender
Add the thyme, pumpkin and stock
Simmer til tender
Add the spices cream and corn
Heat through and taste and adjust the seasonings

Cheddar cheese
Pumpkin seeds
Bacon (bacon, chopped small dice, EVOO, maple syrup, cayenne, and chopped sage, mix and bake at 400 til the bacon is crispy)
